Bertus Basson opens Chorus at Waterkloof

Following the outpouring of support since announcing the sad news that Overture would be closing on the 30th of September 2022.

For 15 years, Bertus was the custodian of  OVERTURE at Hidden Valley. 

The sale of the farm to its current owners in 2021 coincided with the expiry of their long-term lease.

The new owners of Hidden Valley would like to steer the property in a different direction which does not include Overture.

Overture was my first restaurant. Never in my wildest dreams could I imagine that from that first service on 1 November 2007 with a tiny kitchen and handful of staff, that seven more restaurants would be born, or that some great culinary talents would start their careers in this space. Neither could I imagine that so many of you, our loyal patrons, would pass through our doors and keep returning for more. Our gratitude to you is unending.

Overture Restaurant also operates The Deck at Hidden Valley, and it will no longer be under Bertus’ management as of the 30th of September.

On the 14th of September, Bertus announced that CHORUS, his new restaurant, would be opening at Waterkloof Wine Estate in Somerset West on the 18th of October, 2022.

We have been engaging with the Waterkloof team for some time now and are delighted that our dream is coming to life.

Chef Gregory Czarnecki made deep inroads into South African cuisine during his time at Waterkloof Wine Estate and left a remarkable culinary legacy behind. We are proud to be entrusted with the responsibility of extending Waterkloof’s reputation as a world class wine and restaurant destination.

When visiting CHORUS, you will be delighted to see some of the faces you came to know at Overture, with Shaun and Albert heading up the front of house with their team.

About Chorus at Waterkloof

CHORUS will serve a seasonal four and six-course menu, and naturally, the soufflé will appear.

The focus will be simple, focused, seasonal cooking, where ingredients dictate the menu.

Corinne De Haas has designed and crafted a range of crockery for the restaurant, and the team from Naturalis is working hard on reimagining the space.

The wine list will celebrate Waterkloof wines, as well as feature wines from other South African producers.

CHORUS’ opening hours will be from Tuesday to Sunday for lunch and from Thursday to Saturday for dinner. And apart from joining us for the full menu, CHORUS will also have a lounge, allowing you to stop by for a snack and a glass of wine.
