Liam Tomlin’s newly revamped space at 91 Bree Street combines refined aesthetics with culinary delights, promising a fresh experience for patrons. Chefs Warehouse & Canteen reintroduces the beloved original concept, while Merchant Bar & Grill, located upstairs, shines a spotlight on local producers, offering dishes crafted from the finest regional ingredients. Room 91 is a versatile venue for private gatherings, blending elegant decor with the restaurant’s culinary excellence.

The interior features a blend of modern and rustic elements. Exposed brick walls adorned with contemporary art create a warm and inviting atmosphere. Soft leather seating and sleek pendant lighting enhance the cosy yet sophisticated ambience. One corner boasts a curated bookshelf, adding a touch of intellectual charm to the space.

The decor seamlessly transitions from the intimate indoor settings to the inviting indoor-outdoor area, perfect for private events. Natural materials and thoughtful design elements create a comfortable and stylish dining environment.

Chef Adrian, a seasoned expert in breaking down various animals, is mastering the art of working with pigs. Under the guidance of partners Dave and Liam, Adrian is on a continuous learning journey, further honing his skills. The recent porker dismantled in the kitchen was destined for preserved greatness, aligning with the opening of the new restaurants.

Expect to indulge in an array of handcrafted charcuterie and cured meats including brined and smoked hocks, country-style hams, sausages, pancetta, coppa, pulled pork, guanciale, terrines, rich pork stock, lard, and pork crackling. These delectable items will soon be featured on the menu, showcasing the kitchen’s dedication to quality and flavour.

Upstairs from Chefs Warehouse & Canteen is our new concept restaurant: Merchant Bar & Grill. Modern old-school – that’s Merchant Bar & Grill in a nutshell. The old-school… an honest return to kitchen basics, provenance, and the four seasons. The modern… a menu for today and a bar that oozes cosmopolitanism. Expect simplicity, intensity of flavour, and a window on South Africa’s best producers, in the city’s hub.

The Larder is CWs glass-enclosed, temperature and ventilation-controlled repository of house-preserved treasures. Whether it’s kombucha, pineapple beer, preserved artichokes, coppa, or saucisson sec (cured dried sausage), this is the heart of Merchant Bar & Grill and the culmination of a life-long dream for Dave.
