Marble Cape Town has officially opened its doors, not merely as a restaurant but as a celebration of design, fire, and the dynamic spirit of the Mother City. Housed in the historic Union Castle building at the iconic V&A Waterfront, this new addition to the acclaimed Marble family redefines dining through an interplay of culinary artistry and breathtaking design.

A Feast for the Senses

Marble Cape Town brings an immersive experience where fire takes centre stage, not only as a cooking technique but as a communal ritual. At the heart of the menu is the renowned Grillworks, delivering bold, smoky flavours with finesse. Signature dishes like snoek pâté with magwenya and line fish with roasted fish bone sauce embody the coastal and cultural essence of Cape Town, while wood-fired vegetables, such as roasted pumpkin with candied walnuts and burnt honey dressing, offer a surprising complexity born of flame.

Desserts, too, are a playful nod to local flavours, with highlights including the whimsical Cape Town granadilla lolly—a sweet taste of nostalgia reimagined.

The dining experience is complemented by the Marble bar, where innovative cocktails meet a curated wine list celebrating the best of South Africa and beyond. Under the expert guidance of Group Wine Director Wikus Human and Head Sommelier Jan-Hendrik Venter, the wine selection elevates every course with perfectly paired choices.

A Masterpiece of Design

Marble Cape Town’s design is as much a part of the experience as its menu. Interior Director Irene Kyriacou and Redecco have crafted an 800m² space that feels intrinsically connected to Cape Town’s natural elements—wind, sea, and earth. Floor-to-ceiling glass facades frame 360° views of the city, mountains, and harbour, while the outdoor terrace seamlessly extends the space, offering an unparalleled vantage point for Cape Town’s ever-changing light and weather.

“The design is an evolving narrative,” shares Irene. “From stormy skies to vibrant sunsets, the space transforms to reflect the mood of Cape Town. It’s immersive, dynamic, and deeply rooted in its surroundings.”

Art is woven into the fabric of Marble’s identity, with the Cape Town location showcasing bespoke installations that honour the city’s heritage and beauty. From Mash.T’s intricate crystal beadwork to Krisjan Rossouw’s evocative photography, the space is a gallery of South African talent. Other standout features include a stainless-steel ceiling installation that mimics shimmering water and hand-stitched upholstery by Casamento, blending heritage craftsmanship with modern elegance.
